As refreshing spring breezes start to roll in, it’s natural for your stomach to start growling for some light and scrumptious springtime recipes that will help you bring in the season with style. Here at Foodini’s, these are a couple of our favorite recipes for starting this sunny season the right way.

1. Chicken-and-Vegetable Hand Pies

These hand pies only take 35 minutes of active work to make, but they can satisfy an entire group of friends as you sit on the porch and enjoy the fresh breezes.

Some ingredients that you will need are 14 oz of your favorite wheat flour or flour alternative, 1 tbsp salt, 1 tsp baking powder, 10 tbsp cold water, and 2/3 cup olive oil. To create this recipe that will excite your taste buds you will also need 1.5 lbs of ground chicken, 4 oz haricots verts, 3/4 cup chopped carrot, 1 tbsp chopped thyme, 1 tbsp minced garlic, 1/2 cup green peas, and 1.5 cup unsalted chicken stock. Other ingredients such as 1 tbsp chopped parsley, 3/4 tsp ground black pepper, 1 beaten egg, and cooking spray will also be needed.

Instructions

First, combine flour, salt, and baking powder in a food processor and in a separate vessel, combine water and olive oil. With the food processor running, add oil and water to the flour mixture. Next, knead the dough for 1 minute, press it into a 5-inch disc, and let it chill for 30 minutes.

For the next step, preheat your oven to 400 degrees Fahrenheit. Then you will saute the chicken in a pan with oil and place the chicken into a bowl. You can use the same pan to cook haricots verts, carrot, thyme, and garlic with 1 tbsp of olive oil. This is when you can add the chicken stock, parsley, pepper, and salt.

You will need to whisk the egg with 1 tsp water. Then divide the dough into 12 portions, roll each ball into a 6-inch circle, and place 1/3 cup of chicken and vegetable mixture into center of each circle. The next step is to brush the edges of the circles with egg wash and fold the dough to make half-moon shapes. These tasty treats are now ready for the oven! You can bake them at 400 degrees for about 25 minutes.

2. Spinach, Hummus, and Bell Pepper Wraps

These simple vegetarian wraps are just the thing to enjoy in the morning after a night full of springtime stargazing.

The ingredients needed to make this simple dish are 2 flatbreads, 1/2 cup roasted garlic hummus, 1 thinly sliced small red bell pepper, 1 cup baby spinach, and 1 ounce crumbled feta cheese.

Instructions

First, spread both flatbreads with 1/4 cup hummus but remember leave a 1/2 border around the edge of each flatbread.

Next, you can distribute the bell pepper evenly between the flatbreads and top it off with spinach and cheese. Finally, starting from the short side, roll the wraps and cut them in half.
