When a new year rolls around, many people make resolutions to eat healthier. With a busy lifestyle, finding the time to make healthy meals at home could be a challenge. At Foodini’s Catering, our experienced chefs offer these healthy and quick recipes to help you get on the right foot for 2019. We are also available if you need a personal chef or caterers in NJ.

Quick Oatmeal Bowls

Many households are rushed in the morning. It’s tempting to pull through the coffee shop’s drive through and order a pastry and espresso or coffee. These are fast, but they aren’t healthy. We recommend preparing these quick oatmeal bowls. Oatmeal is a whole grain, and it helps you feel full for a long time. It doesn’t take long to make a bowl of oatmeal. For added nutrition, use a plant-based milk instead of water to prepare it. We recommend mix-ins for your oatmeal bowl. Try stirring in a handful of golden raisins, some grated apple and a dash each of cinnamon and nutmeg. Walnuts, fresh berries, banana, sliced peaches or flax seed are also good add-ins for oatmeal.

Yogurt Parfait

Whether you need a snack or a fast lunch, a yogurt parfait is a great choice. Choose a plain Greek yogurt as the base. This yogurt has more protein and less sugar. Add a handful of mixed fresh or frozen berries. Create a healthy version of carrot cake by adding golden raisins, diced pineapple, shaved carrots, shredded coconut and a drizzle of maple syrup.

Foil-baked Salmon

Salmon is packed with healthy fatty acids. Eating a fatty fish once a week is a good replacement for ground beef and other meats with fats that are not as healthy for you. Place a salmon filet onto a square of aluminum foil. Add a drizzle of olive oil, a sprinkle of Himalayan sea salt and some fresh herbs, such as rosemary. Bake in the oven at 350 degrees Fahrenheit for 15 minutes, flipping over the foil packets halfway through the cooking time. Our personal chef, John, can prepare salmon or other healthy fish for you to enjoy.

Keto Nachos

If you’re following a low carbohydrate diet or keto diet, try these nachos. Slice bell peppers into quarters. Cook ground beef, turkey or sausage until browned, adding the taco seasonings of your choice. Add cooked black beans to the seasoned meat. Scoop a few tablespoons of the meat and bean mix into the peppers. Top with cheese, diced tomatoes, onions and dollops of sour cream. These are also great appetizers for parties.
